- Always wash your hands with hot soapy water before and after meat. If you do something else or touch something else, wash your hands again!
- If you have cuts or scrapes on your hands, cover them with a bandage or better yet with plastic gloves.
- Clean every surface that your food will come in contact with. This includes counter tops, cutting boards, plates, dish clothes and utensils.
- Don't chop fresh fruits or vegetables on the same cutting board used for cutting raw meat without cleaning the cutting board first. If at all possible, use separate cutting boards for meats, fish and poultry.
- Never thaw foods at room temperature. Thaw meat in the refrigerator, in cold water or in the microwave. If you are thawing in cold water or the microwave, finish cooking your food immediately.
