- If you don’t plan on using your meat within a few days, freeze it. Overwrap your packages with heavy freezer wrap, freezer bags or aluminum foil to keep them airtight. Be sure to label your packages with the date frozen.
- Your refrigerator should be set to cool at 35°F to 40°F. Your freezer should be set to 0°F or below.
- Be sure to refrigerate cooked foods as soon as possible after serving. If you have large amounts of leftovers, divide them into smaller portions to allow them to cool faster.
- When reheating leftovers, be sure they reach 165°F. If you are reheating sauces or gravies, they should come to a rolling boil for at least one minute before they are served.
- If you need to dispose of leftovers, be certain to keep them tightly packaged so that animals or children don’t eat them.
